Aberystwyth University will play host to an important international conference aimed at improving the quality and safety of beef.

The event, involving experts from more than 40 leading research and industrial organisations from across the world, will be at the University's Institute of Biological, Environmental and Rural Sciences (IBERS). Around 100 delegates are expected to attend the two day gathering on 6 and 7 October.

On the Wednesday afternoon (6 October) the conference links up with the Red Meat Development Programme which is delivered by Hybu Cig Cymru – Meat Promotion Wales on behalf of Farming Connect.

Farmers are invited to attend practical demonstrations on IBERS Gogerddan Farm addressing major issues affecting beef safety and quality, including:

  • Approaches to increasing economic value from the carcass by new butchery techniques for processing traditional "low value" cuts
  • On farm factors which influence the safety of beef and beef products including a demonstration of latest imaging technology to show up any contamination of a carcass in the abattoir
  • Improving eating quality of beef, delivering a higher eating quality experience to the consumer including a feature on the application of Meat Standards Australia

This is a great opportunity for producers and processors to discuss the latest ideas in beef eating quality and safety with experienced workers in the field from across the world said event host Professor Nigel Scollan, Leader of the Animal and Microbial Sciences Theme at IBERS, and an expert on developing production systems to raise the quality of beef.

Four of IBERS' own scientists will present important papers and addresses at the conference; which marks more than three years of IBERS involvement in a five year European Commission research project, called ProSafe Beef. Other papers will be presented by leading scientists from across the European Union on subjects ranging from consumer demand and new products to improving hygiene on farms, food safety procedures in abattoirs and producing more tender beef.

This is proof of the status that IBERS has gained as one of the most innovative research centres in plant and animal science in the world, said Professor Wayne Powell, Director of IBERS.

International delegates will also get to sample Welsh culture in the form of local harpist Sian Price, Côr ABC Choir, and a traditional 'twmpath' dance event with Erwyd Howells.
